2. Combine onion, mushrooms, and black beans, in food processor and pulse until finely chopped. Transfer mixture to large bowl. Fold in breadcrumbs, coriander, salt, and pepper until combined. Form into four 1-inch thick patties. Brush patties liberally with olive oil. Bake on prepared baking sheet until dark golden-brown, about 30 to 40 minutes. Top hot patties with 2 slices Finlandia® Muenster cheese.
3. For the guacamole, combine avocado, shallots, and garlic in small bowl. Season with salt and pepper.
4. Spread guacamole on both sides of buns. Top each bottom bun with burger patty. Layer with red onion, tomato and top with bun lid and serve.
